I uploaded a logbook.adif file and my inbox shows some entries with a yellow field where the country is listed and below it '(Neeeded).'

Can I edit the entry?

What do I do to set the Country for the entry?

Bob,
Don't confuse your InBox with your OutBox. Your uploaded ADIF goes into your OutBox and you can edit those. When one of your OutBox QSOs is matched by another ham, an eQSL is generated and a notification goes into your InBox where you can view the eQSL, you can't edit it there. The yellow 'Needed' is only to indicate that the entry in your InBox or Archive is needed for one of the eAwards. The country is determined by the call and by the other ham's Profile input, I don't think you can change it.
